LOVE Bisquick....

Pancakes have never been a speciality of mine, although I LOVE them and so does Max. Usually I end up buying frozen ones because I either burn them or they are to doughy...but this morning Max wanted pancakes and I didn't have any frozen ones.

Soooo I grabbed my box of bisquick took a look at the directions...pretty basic: 2 cups bisquick, 1 cup milk, 2 eggs. THEN I noticed under that there were a couple tips listed for variations. One for thinner pancakes, how to add fresh fruit and then "melt-in-your-mouth" pancakes. I figured I would give it a try and see what happended. If they turned out horrible I could always make him oatmeal. The varation was to add 2 Tbsp. sugar, 2 tsp. baking powder, and 1 tsp. vanilla extract (which I didn't have so I used almond extract instead). I mixed everything together, got my pan nice and hot on a medium temp and went to town.....

AMAZING! I don't know if it was the baking powder but they were soooo fluffy, and with the almond extract they had just a hint of nuttiness.....soooooo good!  Of course the recipe makes about 12-15 pancakes depending on their size. Well even though I love pancakes I cannot sit and eat 12 of them. I decided I was going to try and freeze them. Seperated them into 4 bundles, wrapped them into foil and then placed them in a freezer bag.

I am  hoping that they will freeze well and still be tasty when I take them out the next time....I highly suggest anyone that LOVES pancakes to give this recipe a try!!!

Easy Recipes....Happy Mommy!

It seems that deciding what to make for dinner is always a debacle. BUT last night we had a great dinner that was sooooo easy to make I didn't even feel like I made dinner at all.

I bought a seasoning packet by McCormick that is specifically made for slow cookers....it was for a pulled pork sandwich. Let me tell you it was so easy!!

You just toss in your boneless pork roast, 1/2 cup ketchup, 1/2 cup packed brown sugar, 1/3 cup of cider vinegar, and last but not least the seasoning packet. You cook it on low for at least 8 hours and then ka-baam. Nice, juicy, yummy, lip smacking pulled pork samitches! I also made homemade potato salad. It was a great combo!

Even had it again for dinner tonight. Got to love recipes that are great the 1st night and then even better the 2nd night!

Cuilinary King...

I just realized today that I forgot to mention something in my Nana & Papa Jim post. Max turned 6 months old while they were here. January 13 to be exact.

Just two short days later we visited the pediatrician for his next set of "killing mommy" shots. Or as some would call "vaccinations." Anyway....Max now weighs 19 lbs and 1 oz, and he is a whopping 26 in' already. We started marking him on the wall out in the living room. I was going to do it in his bedroom but I love seeing it every day.

Max has also expanded his food selection. He has tried apples, pears, and bananas. Believe it or not he did not care for the bananas but he LOVES the apples. Just yesterday he had peas for the first time. It's funny because he did not really care for green beans but he inhaled the peas....go figure. Max also tried juice for while Nana was visiting. I gave it to him in a sippy cup and he did great for the first few minutes but then things went downhill from there...

He started to get angry and started flailing the cup around and eventually dropped it.

But I managed to snap a few photos of him before the flailing began. I just love how he props his feet up when I don't have the tray up on chair!! He loves to just chill!!! I do have some videos that I am going to attempt to get up tomorrow but have patience, especially you Nana!!!!

Yum, Yum...

HOTY hasn't been feeling well these last couple of days so being the dutiful wife that I am I decided to make him some homemade soup. Amazing isn't it...


I found a really good looking recipe for Potato Soup, which I know that he likes. So yesterday I got all my ingredients out; potatoes, onions, celery, chives, bacon, half & half, and a touch of milk and butter and got to peelin. How I had time to do this I have know idea because Max was having a "No Sleep Strike" but somehow I managed to get it all done and simmering on the stove before HOTY came home.



I happened to be letting Magoo out as he was pulling in and he said that something smelled good, all the way from outside! Go me! At about 4:00 pm Max decided to end his strike and took a nice nap (three hours to be exact!) and we sat down to the table for some Chunky Potato Soup. I have to say that it turned out better than expected. Karl even commented on how much he liked it. We both had a huge helping and decided to freeze the rest for some other cold blustery day....oh wait we don't have those out here...HA HA!
